Gochugaru 고추가루

 

Pronounced: go-choo-kah-lroo

Characteristics: smokey, spicy flavor with a coarse ground texture

Made with: red chili

Commonly used in: kimchi and marinades

 

These flakes are from the same pepper that makes gochujang. Although this is a staple ingredient in Korean cuisine, it's very versatile and can be used in place of crushed chili flakes. The texture is coarse but consistent, with a smokey and spicy flavor. 

Gochugaru is commonly used in cucumber kimchi.
